Slowly heat cream over medium-low heat. When it starts to warm, it will get a thinner consistency. Add guar gum, vanilla, and orange zest when it gets to room temperature. Mix and continue to heat. Do not let it boil and stir constantly.
Chop chocolate and put it into a bowl. When cream is steaming and just starting to simmer, remove from heat and pour over the chocolate. Let sit for half a minute to melt the chocolate and then stir.
Mix until all the chocolate is melted and you have a smooth consistency. Let cool. Cover with plastic wrap and refrigerate.
