Simple Banana Nut Bread

"This is my grandmother's recipe for banana nut bread. I love making it with bananas soon before they're ready to be thrown away. My boyfriend doesn't like nuts, so it tastes great without them as well. Easily doubled if you'd like to make more."

  • 2 tablespoons Crisco (or butter)
  • 2 eggs
  • 1 cup banana (mashed, add 1/2 cup more if you like)
  • 34 cup sugar
  • 12 cup nuts (whichever kind you like)
  • 1 34 cups flour
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 14 teaspoon baking soda

  • Preheat oven to 350. Grease a medium sized loaf pan for single recipe. Pour batter in pan and bang on counter a few times to release any air. Bake about 1 hour or until toothpick comes out clean.

  1. Made for PAC Fall 08. The taste is definitely worthy of 5*, but the directions were lacking so I have only rated as a 4*. I had to refer to my usual recipe, so I would suggest, that you just include some further direction. I creamed the butter and eggs together, then added bananas (i did used the extra 1/2 C as suggested) and mixed well. Mixed dry ingredients together and then gradually added them to the wet ingredients and stirred by hand. We aren't big on nuts so I substituted chocolate chips. I was a bit surprised that there was no buttermilk or milk as my usual recipe(s) call for it. But, not to worry, the end result was moist and very tasty. Thx Abbey212 for the recipe.
