Sicilian Marinara Sauce

This is my Sicilian grandmother's recipe. Absolutely delicious. Best served with meatballs, Italian sausage and veal; it's an excellent marinara sauce.

ingredients
- 28 ounces crushed tomatoes, fresh tomatoes add more flavor
- 16 ounces tomato sauce
- 6 ounces tomato paste
- 1 cup veal stock or 1 cup beef stock, may be substituted
- 1 large red onion, diced
- 2 large green peppers, diced
- 3 garlic cloves, minced
- 1 tablespoon white sugar
- 2 tablespoons red wine
- 2 teaspoons fresh oregano, minced
- 2 teaspoons fresh basil, minced
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons extra virgin olive oil
- salt, to taste
- white pepper, to taste
directions
- In a large pot over medium heat, add olive oil and saute the onions and green peppers. Combine the remaining ingredients and simmer over low heat for about 30 minutes to one hour (cook slowly over longer period of time for the best flavor). Stir frequently to prevent burning.
