ingredients
- 1 tablespoon vegetable oil
- 1 small green pepper
- 1 garlic clove
- 1⁄2 cup corn
- 1⁄2 cup salsa
- 1 pint cherry tomatoes
- 1 lb shrimp, cooked
- 1 tablespoon butter
- 1 tablespoon cilantro
- 1 tablespoon lime juice
directions
- In a skillet, heat oil and add green peppers.
- Cook 3 minutes.
- Add garlic.
- Stir in corn and salsa.
- Bring to a boil.
- Stir in tomatoes and shrimp.
- Cook 1 minute.
- Stir in butter.
- Spoon over tortilla chips or rice.
- Garnish with cilantro and lime.

*For PAC Spring 2008* - prepared as listed, except for corn (can't do that). Served over Saffron rice. Made a lovely Friday night dinner, enjoyed by DH and me, plus enough for his lunch tomorrow. We generally "spice" things up a tad, and next time (and there WILL be !) - may add some tad of taco or chilli seasoning. I particularly liked the mingled flavors, none of which overpowered the rest. Thanks, Kathy!! for a tasty addition to "Fix-Again" list.
