Shrimp Potato Nachos

  • Begin cooking the potatoes in a 12 inch skillet with a little oil in the bottom of the pan. Cover and let cook, stirring occasionally until the potatoes are starting to brown, about 12 minutes.
  • In another skillet, melt the butter and combine with lime juice. Stir in the frozen shrimp and cover until shrimp is thawed, about 5 minutes.
  • In a sauce pan combine milk, flour, and butter and heat on medium until the sauce begins to thicken. Remove from heat and quickly whisk the grated cheese into the sauce.
  • Layer the potatoes, shrimp, and sauce with the remaining ingredients into two bowls and enjoy!
