DIRECTIONS

  • Cook orzo according to pkge. directions.
  • Mix olive oil, lemon juice, onions, cucumbers and mustard - set aside.
  • Drain orzo and mix in lemon jest.
  • Cook shrimp in butter & oil and what ever spices you like - for 1-1 1/2 minute per side.
  • Add lemon & oil mixture to the orzo - while still warm.
  • Add cooked shrimp and almonds.
  • Season to taste.
  • Serve.
