Shredded Beets With Creme Fraiche and Mint

- 2 cups raw young baby red beets, shredded
- 3⁄4 cup shredded red cabbage
- 1⁄3 cup red onion, sliced into thin crescents
- 1 tablespoon capers, undrained
- 1⁄4 cup creme fraiche (this works ( Homemade Creme Fraiche)
- fresh mint leaves (fresh *only*!)
- salad greens (optional)
directions
- Stir together the beets, cabbage, onion and capers in a bowl.
- *Divide and arrange on salad plates.
- Top each serving with a drizzle of creme fraiche and a few mint leaves.
- *Note: If desired, serve the beet mixture on a bed of greens of your choice: mixed, arugula, etc.
