  • 1 12 lbs sweet potatoes, scrubbed and cut in 3/4-inch cubes (about 2 medium)
  • black beans, drained and rinsed
  • 1 large onion, peeled and diced
  • 34 lb loose sausage, crumbled into large pieces
  • 3 tablespoons olive oil, plus additional for serving
  • 1 14 teaspoons smoked paprika
  • 12 teaspoon red pepper flakes (to taste)
  • kosher salt & freshly ground black pepper
  • 2 packed and heaping cups Baby Spinach
  • 6 large eggs
  • chopped cilantro, for serving

  • Line a baking sheet with parchment paper. Place sweet potatoes, black beans, onions, and sausage on pan. Drizzle with olive oil, smoked paprika, and red pepper flakes, and season generously with salt and pepper. Toss to coat.
  • Transfer to oven and bake, stirring three times, until sausage and sweet potatoes are just turning golden, about 25-30 minutes. Remove pan from oven, add spinach and stir to combine.
  • Make 6 wells on the sheet pan for eggs to bake. Crack an egg into each well, season with salt and pepper, and return to the oven. Bake just until whites are set and yolks are still runny, about 7 minutes.
  • Divide eggs and hash among serving plates. Drizzle each serving with additional olive oil, top with cilantro, and serve.

  2. Loved this! Would microwave the potatoes to par cook before baking. Took too long with raw potatoes. Made this for dinner with Italian sausage and butternut squash. Big hit!
     
  3. Very good recipe here. There is no stated oven temperature. I went with 375 on the convection setting. The yolks were completely set however, so 5 minutes to cook the eggs might be more appropriate at this temerature.
