Shakshouka

"Shakshouka (shakshoka, chakchouka, shak-shouka, shak shouka) is a Tunisian and Israeli dish made of cooked tomatoes, peppers, spices and eggs. It is very similar to the Turkish dish Menemen and to the Latin American breakfast dish huevos rancheros. In Israeli cuisine, the dish is made of eggs, tomatoes, and onions or garlic. Shakshouka is typically eaten with a pita, like many other Middle Eastern dishes, or with white bread that is dipped in it. Posted for ZWT#6"

  • Sauté the onions and garlic until soft in about a tablespoons of olive oil, flavoured with a grind of black pepper. This will take about 8 minutes.
  • Meanwhile, grate the tomatoes using the coarsest grater you have.
  • Add the tomatoes, peppers, paprika and mix well.
  • Season to taste
  • Cover and simmer on a very low heat for 25 minutes.
  • After 25 minutes, break the eggs on to the surface of the tomato mixture.
  • Cover and cook for 4 minutes or until the eggs are done to your liking.
  • Some cooks like to break the egg yolks and swirl them into the tomatoes.

  1. Who knew that grating tomatoes gives you almost instant tomato sauce! Cool :D. That said, this is really delicious. It takes a little bit of time but is so worth it. The sauce develops a grand deep flavor and the egg cooked this way is almost like silk. You'd never believe that it's low cal. Thanks so much Jenny for this keeper. :D

<p>Hi,&nbsp;&nbsp;I&nbsp; have three grown up kids and&nbsp;7 &nbsp;grand kids&nbsp;1&nbsp;greatgrandchild and an other on the way. I work p/t as a cleaner in a large office, and sometimes I help as tea lady and I do a bit of reception duties not a lot just a bit, I tend to cut people off in error of course.&nbsp;I have a wee dog called Molly, and is&nbsp;so so naughty, but we love her to bits even if she won't do as she is told. She is a cross between a poodle and a jack Russell and is now&nbsp;four years old. I love my garden and growing everything&nbsp;&nbsp;&nbsp;I just have a small plot, so I like things that grow well in pots, and of course cooking. I love all cook books so I cant pick one but I have one that I refer to a lot Delia Smith's complete cookery course, a good all rounder. I have discovered that I am now diabetic and have had to change my eating and cooking habits I now try to go for the healther option rather than all the cream, butter and sugar, and I have lost 32 pounds, and feel so much better.
