Sergios Belgian Endive Salad

"This is something my former employer at an Italian restaurant used to make after work, one of 2 ways that make me eat Belgian endive. It's not a proper recipe, so i have never measured the ingredients."

  • Cut endive in quarters, take away the bitter part in the center.
  • If you want you can cut them into smaller pieces, but the quarts look quite nice imo.
  • Wash, dry.
  • Drizzle some olive oil over it.
  • Grind pepper and salt to taste.
  • And that's it!

  1. As written, this could be dangerous to a new cook....it's too much salt for that amount of endive. that said, what a simple & refreshing recipe! for the 4 of us, i fixed 6 endives & used less than 1/2tsp salt. Made for ZWT7. :) Thank you!
