Secret Recipe Cold Corn Salad

"I definitely recommend doubling this recipe as it is so good that you won't have a kernel left. If you are serving this to kids you don't have to put in the red onion and if you have trouble finding sour pickles a deli will always sell you some sour pickle juice if you just ask. Due to the pickle juice, this will develop a sour taste if left overnight so use within a couple of hours of preparing. Enjoy!"

  • Steam corn if using.
  • Drain well.
  • Dice vegetables and add to the corn.
  • Add remaining ingredients and mix well.
  • Chill for 30 minutes before serving.

  3. We are going to a Family Reunion tomorrow, 3 hour drive, needed something that could withstand the drive in cooler and be good on a buffet in an ice bowl to stay cool. Will rate it as 5*'s before making it, based solely on convenience of shopping for ingredients and not much time required to prepare; but will definitely rate it after people try it at the get-to-gether!! I'm excited, as this is something brand new and sounds fresh, light and crunchy. It sounds like a good salad to "mix it up" placed next to the same 'ol hum drum potluck sides!! Stay tuned--
