- 12 -14 small red potatoes
- 1⁄4 cup olive oil
- 1⁄4 cup butter, melted
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon pepper
directions
- Peel a strip from around each potato.
- Place potatoes in an ungreased 3 quart baking baking dish.
- In bowl, combine the oil, butter and seasonings; drizzle over potatoes.
- Bake, uncovered, at 350 degrees for 50-55 minutes or until tender, stirring every 15 minutes.

This was another recipe that I cut in half for just 2 of us, but that didn't detract from the great flavor ~ Absolutely wonderful! DELICIOUS and so very quick and easy to prepare: I'll definitely be making these again. I used small new (i.e. young potatoes) and, although I noticed that many earlier reviewers had omitted the butter, I decided to use both the olive oil and the butter as I knew the two together would be sensational - and they were. I added 4 cloves of minced garlic instead of the garlic powder and added rosemary and sage to the other herbs. These potatoes smelt wonderful while cooking, looked as delicious as those in cookiedog's photograph and tasted superb. This is not only a wonderful way to cook potatoes but it's a recipe that frees you up to make another dish while they are cooking. The potatoes also re-heat very well in the microwave, and are a great addition to an omelette: that's how I used the last of these. Thank you, Lainey, for another fantastic recipe!
