Scrambled Egg Quesadillas

- Ready In:
- 2 flour tortillas
- 3 eggs, beaten
- 2 tablespoons milk
- 1⁄4 teaspoon hot sauce (I like Chalula brand)
- 2 slices bacon
- 1⁄4 cup cheddar cheese
- 1 tablespoon butter
- salt and pepper
- In a large skillet, cook the bacon until crisp. Remove and drain on paper towel, then crumble. Set aside.
- Beat the eggs adding the milk and hot sauce.
- In another small skillet, heat the butter over medium low heat and when hot, scramble the eggs, cooking until soft and creamy.
- Lay out 1 tortilla. Top with the cooked eggs, the bacon and the cheese.
- Place the second tortilla on top of the filling.
- Reheat the bacon fat in the first skillet over medium heat. Place the filled tortilla in the skillet, cooking for about 1 minute.
- Flip the tortilla with a large spatula and cook the other side until browned and crispy, about 1 more minute.
- Remove from heat and cut the tortilla like a pizza into wedges.
- Serve with more hot sauce, or salsa.

Yum!!! :) I scaled it down for one, and used one large burrito tortilla (that I folded over as I cooked), 2 eggs, and a handful of monterrey jack cheese. I cooked the bacon on my george foreman grill, so I didn't cook it in the bacon grease, just a pan sprayed with PAM. Very tasty and a filling breakfast! Thank you so much for sharing!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges. As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic. <img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried. But the good news is that I can control my glucose levels simply by eating very low carb. What a complete turn around it was to pass up all my high carb vegetarian foods like grains, and veggies and embrace meat! <img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p> The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain. I thank God that I am so much better today after more than two years recovery, with total mobility and just some minor pain in my arms and hands. Cooking and communicating here was not really on my priority list. But, I am back in action and ready to cook, take photos, and enjoy this wonderful community of friends.<img title=Laughing src=../tiny_mce/plugins/emotions/img/smiley-laughing.gif border=0 alt=Laughing /></p> <p>My husband and I continue to enjoy our grandchildren and being closely involved with their day to day activities.
