- 5 onions, cut into wedges
- 1⁄2 cup vegetable oil
- 2 garlic cloves, crushed
- 3 1⁄2 juniper berries, crushed, dried
- 1 1⁄2 teaspoons stone ground mustard, German
- 1 1⁄2 teaspoons dried thyme
- 1 1⁄2 teaspoons dried oregano
- 1 1⁄2 teaspoons paprika
- 1 1⁄2 teaspoons curry powder
- 1 1⁄2 teaspoons cayenne pepper
- 1 1⁄2 teaspoons ground black pepper
- 4 (8 ounce) boneless pork loin chops
directions
- Place the onion wedges in a bowl. Use a large spoon to gently press the onions until they release some of their juices. Combine the oil, garlic, juniper berries, mustard, thyme, oregano, paprika, curry powder, cayenne pepper, and black pepper with the onions and mix to combine.
- Arrange the steaks in a large baking pan. Pour the marinade evenly over top of the pork. Cover and refrigerate for at least 24 hours.
- Remove pork from marinade and allow to come to room temperature as you preheat the grill.
- Wrap the onions separately with foil to create a pouch. Discard marinade.
- Preheat grill for medium heat.
- Grill the pork steaks and onions until the pork is no longer pink in the center, about 10 minutes per side.

The recipes for this on German sites call for using "scheinenacken" which translates to "Pork Neck" or pork neck steaks. In the U.S. this is called pork collar. Very hard to find here as I was told that meat is usually put into sausages. You can find it online but it isn't cheap. Unfortunately, it is what makes schwenkbraten taste so dog gone good. After many attempts, I can attest that other cuts just don't work. Also, brotchen is a must.

Holy disappointment, I prepared the steaks as per the recipe and it was not at all like I remember in Germany. After 30 hours marinating in the refrigerator the meat had not absorbed any of the spice flavor. I wonder if there should be some salt in the recipe to help the spices flavor the meat. I use to buy schwenk steaks in the German meat market and they were wonderful. I used boneless sirloin pork chops. Maybe that was the problem.
