  • In medium skillet, melt butter and cook red pepper over medium heat until crisp-tender.
  • Stir in uncooked rice, then golden onion soup mix thoroughly blended with water and lime juice.
  • Bring to a boil, then simmer covered 30 minutes or until rice is tender.
  • Stir in remaining ingredients and cook covered 5 minutes or until scallops are tender.
  • Serve, if desired, with freshly gound pepper.

  1. I followed the above suggestion and added some garlic, I also used 1/2 cup of the juices from the thawed scallops to mix in with the water. Delicious recipe, and not very expensive at all. Will definitely make this one again and tinker around with it.
     
  2. I made this the other night for my daughter and myself for dinner and it was really good. The only changes made were to add some shrimp with the scallops and some garlic, black pepper and a sprinkle of parmesan. My son ate some of the leftovers the next day. Everyone agreed it was a make again dish.

I am a recently converted pescetarian after watching the movie 'Fast Food Nation.' That's not entirely true, I will eat meat but only if it comes from my boyfriend's cattle farm, someone shoots it during hunting season or it's a pig that's been thrown on the smoker at a pig roast. I know how it was processed so I'm not afraid to eat it. I am also a bartender at a fine dining restaurant in Duncannon, PA - Micheal's Cafe. It's the best food by far that you will get in the area.
