Scalloped Cheese Breadfruit

"This is taken from a cookbook from Barbados. My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish."

  • Preheat your oven to 375 degrees F.
  • Boil the breadfruit in lots of salted water until tender; this takes about 20 minutes.
  • Heat the butter in a saucepan. Add the onions & cook until golden. Remove the onions and set aside.
  • Add flour to same saucepan and cook,stirring for 1-2 minutes. Slowly add the milk, whisking until the mixture begins to thicken. Remove from the heat.
  • Add the grated cheese, nutmeg, salt, & pepper.
  • In a buttered casserole dish layer the breadfruit, onions, and cheese sauce, ending with the cheese sauce.
  • Bake for 25 minutes.

  1. It is best to cut the breadfruit in slices instead of chunks; like when doing scalloped potatoes. If you do it in chunks the sauce does not penetrate the breadfruit. Also, do not boil for 20 mins. Boil until tender and a cooking fork easily goes through.
