Savory Sweet Potato Fries

- 2 large sweet potatoes
- 1⁄4 cup olive oil
- 1 teaspoon crushed rosemary
- 1 teaspoon thyme
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon black pepper
directions
- Preheat oven to 450 degrees.
- Wash the potatoes with cool water and pat dry. No need to peel them but you can pull of the little "stems".
- Cut the potatoes into fry-size pieces. If you don't have a fancy gadget for this, I suggest enlisting your husband to do this because sweet potatoes are hard to cut!
- Place all the fries in a gallon size Ziploc bag along with the oil. Seal the bag and toss to coat.
- Open the bag and add in the seasonings. Toss again until all the fries are evenly coated.
- Spread the fries out on two baking sheets. This gives them enough room to get crispy. If they're too crowded, they just get steamed and soggy.
- Bake the fries in the oven for 15 minutes and then turn the fries using a pair of tongs or a spatula. Bake for another 15 minutes.
- Fries should be slightly crisp. Some black on the edges is okay, since it's pretty tasty, just not too much!

Made for a light little snack after lunch for us. These really beat buying those frozen sweet potatoes in the store. I made this as posted cutting the garlic powder, and pepper ammounts using 1/4 teaspoons each. These had a real nice combo of seasonings in these, and this is something I will make in the future. Served these with recipe#353426#353426. Made for 2011 Cookbook Tag.
