Savory Mushroom Rice

I love this recipe. Easy to throw together and just a nice change from plain rice. Serve it with meat, pork, chicken...just anything.

ingredients
- 2 cups uncooked rice
- 2 cans cream of chicken soup
- 1 can water
- 2 medium onions, chopped
- 1⁄2 cup butter or 1/2 cup margarine, softened
- 2 cans mushrooms (6oz each) (optional)
- 1 teaspoon salt
directions
- Mix all ingredients in a 2-quart casserole (Ungreased).
- Cover and bake 1 hour at 325.

While I love rice, my DH does not so I don't get to enjoy it at home often, that being said, this recipe sounded too good not to try, boy am I glad I did. Not only was it delicious, for my tastes, but even DH liked it and had 2nds, say what??? I was baking Cornish Game Hens at 350° so I prepared this at the same temp for 45 minutes and the rice was perfect. Thank you so very much bert2421 for posting a rice recipe that I can make again and again and know it will be eaten.
