Sauteed Apple Crisp

ingredients

  • 1 refrigerated pie crust
  • 2 tablespoons Smart Balance butter spread
  • 14 cup sugar, divided
  • 4 apples, peeled cored and sliced
  • 34 teaspoon cinnamon
  • 8 scoops low-fat vanilla frozen yogurt (optional)

directions

  • Preheat oven to 375.
  • Brush crust with one tablespoon melted smart balance; sprinkle lightly with 2 t sugar. Cut into 8 wedges.
  • Place pieces on baking sheet and bake until puffed and golden, about 7 minutes. Set aside.
  • Heat remaining smart balance over high heat; add apples and saute 4 minutes.
  • Reduce heat to medium high. Sprinkle apples with remaining sugar and cinnamon.
  • Cook 3 more minutes or until sugar dissolves and mixture thickens, stirring occasionally.
  • Place apple mixture into 8 serving dishes. Top each with one wedge of crust.
  • Serve topped with frozen yogurt.

    Mmmm, think pie al' mode. This is very yummy and takes less time than a traditional apple pie. Like that it uses Smart Balance, low fat frozen yogurt, and I used Splend for baking in place of the sugar. Perfect thanks for the post.
