I found this on the Fins Restaurant website while looking for a trumpeter recipe. I used baby spinach, as I already had a bag in my fridge. Serve with Wasabi Mash and Trumpeter With White Wine.

- 500 g spinach
- salt and pepper, to taste
directions
- Sauté spinach in olive oil and garlic for one minute or until wilted.
