Sausage or Beef S. O. S. (Stuff on a Shingle)

"After 32 years in the military, I have become quite fond of S.O.S.. I'm the cook in our house, but I get breakfast cooked for me twice a year (my birthday and anniversary). My request is always the same--S.O.S. This is my wife's recipe--I love it."

  • Brown the ground beef or sausage, drain and set aside. Be sure to season the ground beef with a little salt and pepper.
  • Melt butter in sauce pan. Add flour and stir till butter/flour mixture is bubbly.
  • Add milk, salt, and pepper.
  • Stir constantly until thick and bubbly.
  • Add meat and stir.
  • Serve over whole wheat toast. Great over biscuits as well.
  • Note: For an evening meal substitute chipped beef.

  1. i demand this not be censored! i have a dream where we can call recipes by their real name and not be worried about it offending someone. this is not, "stuff on a shingle". changing the name just to be family friendly will cause its true one to be forgotten. its name is chipped beef on toast! (btw this recipe turned out awesome. for the life of me i couldnt find my old recipe for it)
     
  2. Good, just like my military days, great with some fried eggs.

Can also brown the sausage (I use 1 16oz package of Jimmy Dean Sage and 1 16oz package of Jimmy Dean Hot), don't drain the grease and add 1-2 cups flour (until the meat is covered white-ish) then start adding milk until you reach desired consistency. That is how i make Sausage Biscuits and Gravy
     
  4. Well you lost me when your drained all the flavor from browning the meat and the fawn. To the pan drippings slowly add your flour, enough that the mixture goes from glossy to a dull sheen, add the minced garlic stirring the mixture constantly to cook the flour. Add whole milk or 1/2 & 1/2 (not low fat or skimmed milk) to your desired consistency, season with S&P, leave on low burner for 8-10minutes. Your gravy will never separate using this method. Save the butter for your biscuit.

  1. Also can add extra flavor and thicken gravy by adding small amount of cream cheese and allowing to melt

  4. I haven't seen this recipe since childhood. My mother made it frequently except she used the grease from the hamburger instead of butter. Definitely comfort food that brings back childhood memories.
