Sausage casserole

"I made this up to use some vegs left in the bottom of my fridge. You can put whatever veg in you like, it will all cook together. Also, i put tobasco in most things to taste, so its not necessary to the recipe!! Its a marvellous dish to put in the oven and leasve - I tend to make it when I get in from work and then i am free to sit down for a while. I serve it with (as a rule) roast sweet potatoes, but jackets or bread would go just as well. Also, its delicious cold :o)"

  • Preheat oven to 180- 200 degrees C.
  • brown sausages in frying pan.
  • while sausages are on, heat the remaining chopped ingredients in a casserole dish (except worcester sauce, tabasco & herbs) when sausages are browned, cut them into chuncks and add to the casserole dish.
  • Put into a preheated oven for up to 2 hours.

  1. Hearty dish, simple. The tastes are really basic, but in a good way. Unfortunately, my sausages were of poor quality and rendered quite a lot of water. Will try again with good quality sausages next time !
     
  2. I was looking for something I could make on a cold winter's day without having to stand in the kitchen for hours. I followed this recipe exactly and served it with mashed potatoes. Delicious and so easy!! Tip: Make twice as much and freeze the rest for another day!
     
  3. this was an excellent easy dish to make....great for when the realtor was coming and we didn't know when we would be able to eat....DH was disappointed when the LO got left out a little too long and i had to pitch. Also, i used celery, instead of the zucchini, and kielbasa cause that's what we had around. and we ate with pasta and garlic bread. i would cover with foil if you are planning to leave in the oven for an indeterminate amount of time cause it got a little "carmelized"....while not bad, it did make the pan clean -up a little harder that i would have liked...all in all this is a keeper thanks for posting!
     
  4. I got a lot of smoked sausage on special last week so I was looking for a receipe. Well I had a bag of broccoli so that went into the bottom, then I added some onion and green pepper and a can of diced tomato with onion and green pepper in it. Then I added four baby bella mushrooms sliced thin and a LOT of fresh garlic (a bit too much as it turned out). I took a hint from Michelle and added some wine and broth. I couldn't find the brown sugar (made cookies over the weekend) so I used a small amount of molasses instead. I let the whole thing slow cook for about three hours and ate it with some toasted bagette. Delicious! Michelle was correct, the juice makes great dipping for the bread.
     
  5. This creative little dish is very tasty and fun! I followed Belle Vixs lead and went to the fridge. I grabbed a red bell pepper and half a head of cabbage..to this I added A diced onion and a sweet potato. I had only 1 can of tomatoes and added 3/4 c each white wine and chicken broth. Add browned kielbasa, some garlic, and a generous tablespoon of brown sugar, with the recipes suggested seasonings included as well. In the oven for 1 1/2 hours and we had a great dish! Everything melded perfectly and the juices for dipping bagette pieces in was absolutely delicious. Thanks Vix, this is one good dinner!
