ingredients
- 1 lb bulk sausage
- 1 cup onion, chopped
- 1 garlic clove, minced
- 1 cup celery, chopped
- 1 green pepper, chopped
- 1 cup rice, uncooked and washed
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 1/2 ounce) can cream of chicken soup
directions
- Preheat oven at 350°.
- Brown sausage in frying pan and pour off grease.
- Add chopped onion, garlic, celery, and green pepper to sausage and simmer until tender.
- In bowl combine rice and soups and then add cooked ingredients.
- Pour into greased Pyrex pan.
- Bake 1 1/2 hours at 350°, stirring occasionally.

I use 1 can of chicken gumbo to mix in with rice and the veggies . After getting mixture in to a pan for baking I level the top an add a can of cream of chicken an spread it carefully over the top like icing a cake. Bake till bubbly around the edges. For a quick fix fry sausage celery onion & bell pepper put in crock pot with 2 cups dry minute rice & 2 Cups water add gumbo mix well, spread cream of chicken on top put on low for a meal thats ready when you get home from work. My mom used the crock pot method for company n she didn’t have to keep an eye on the Cassarole.

This is a really great recipe, super easy & tasty too. I used sausages cut into small pieces & a mixture of green & red peppers, instead of celery I used carrot. Instead of baking in the oven I let it simmer on a very low heat on the stove until the rice was tender. It's kind of like a sausage risotto, yummy, thanks for posting!
