ingredients
- 1 lb smoked Polish sausage, cut in 1/2 inch pieces
- 1 tablespoon oil
- 5 potatoes, peeled,and diced
- 2 carrots, chopped
- 4 (14 ounce) cans chicken broth
- 1 teaspoon garlic, minced
- 1⁄4 teaspoon caraway seed, optional
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon thyme
- 1 (32 ounce) can sauerkraut, rinsed and drained
- 1 (6 ounce) can tomato paste
directions
- In large pot, brown sausage pieces in oil.
- Add next 7 ingredients; bring to a boil.
- Reduce heat, cover and simmer for 20 minutes.
- Add sauerkraut and tomato paste.
- Bring back to a boil.
- Cover and simmer another 15 minutes.

I really, really enjoyed this tasty soup! It was a cold day today and it did the job of warming me up. I'm really giving it 4.5 stars. I'm anxious to eat it again! I sauted one green onion along with turkey Kielbasa and added a little more garlic. I used free-range chicken broth from cartons and organic sauerkraut. I left out the caraway seeds.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
