Sarah's Oatmeal Cake

ingredients
- 1 cup oatmeal
- 1 1⁄2 cups boiling water
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 eggs
- 1⁄2 cup oil
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
directions
- Pour the boiling water over the oatmeal and let it cool. Add baking soda, salt, and cinnamon to the sifted flour. Add the granulated and brown sugars. Mix in the eggs and oil. Combine the batter with the oatmeal. Pour mixture into a 9 by 12 inch pan. Bake.for 40-50 minutes at 350 degrees.

I’ve made this cake 3 times in just as many weeks. My family loves this recipe. The first time and third time I made it exactly as written. The second time I added 1 teaspoon cardamom, I liked it my family didn’t. I am making it for the fourth time as written as I write this review. I now have the recipe memorized. It will be a staple in our home from now on.
