  • Combine corn, tomatoes, beans (do not drain) and 1/2 can of water in pot and bring to boil.
  • Add rice, cook until tender.
  • Remove from heat.
  • Sauté turkey/chicken strips in oil and hot sauce (to taste).
  • Mix meat with corn, tomatoes, beans, and rice.
  • Add sour cream.
  • Salt and pepper to taste.

  1. I made this recipe for dinner last night. This makes a TON of food. I suggest cutting it in half (especially the rice). Instead of hot sauce, I used fajita seasoning and dried onions in with the turkey. I also found that the recipe needed a good amount of salt to add taste. Very good combination!

22 years old, with wonderful hubs no kiddles (but we do have 2 cats and a snake). I'm working full time and going to school full time, so any cooking i do has to quick and easy or planned far in advance. i'm not a veggie fan, but i'm working on it! stilly newlywed and still building my recipie lists! any suggestions would be helpful!!!
