Santa Fe Coleslaw

"This slaw has jicama, corn, cilantro and chipotles. From Sunset Mag July 2008. Found it when I was cleaning out my recipe book. I can't wait to try it...Let me know how you like it! I think I'm gonna grill my corn."

• Serves: 6

ingredients

• 4 cups shredded green cabbage
• 2 cups torn spinach leaves
• 1 1⁄2 cups shredded jicama
• 2 green onions, chopped
• 1 cup cooked corn
• 1 cup finely chopped tomatoes
• 1⁄4 cup chopped cilantro

• Dressing

• 1⁄4 cup mayonnaise
• 1⁄4 cup sour cream
• 2 tablespoons finely chopped chipotle chiles in adobo
• 2 tablespoons fresh lime juice
• season to taste with salt

directions

1. Pour dressing over slaw mix.
2. Stir until combined.

WOW this was alot of prep work! I worked on this for 1 hour!!!! The outcome was wonderful and worth the work though. I made a TON of this stuff for a family reunion and the bowl was licked clean- everyone was asking.."who made this!?!?" "What all is in this?" "Wow - this has so much flavor!" I was proud to claim it! I used a whole head of cabbage, a hold jimaca and added 1 chopped red-bell pepper and 1 chopped jalapeno. I had to double to sauce recipe to get it all coated. thanks for sharing the recipe with us!
