- 4 cups shredded green cabbage
- 2 cups torn spinach leaves
- 1 1⁄2 cups shredded jicama
- 2 green onions, chopped
- 1 cup cooked corn
- 1 cup finely chopped tomatoes
- 1⁄4 cup chopped cilantro

Dressing
- 1⁄4 cup mayonnaise
- 1⁄4 cup sour cream
- 2 tablespoons finely chopped chipotle chiles in adobo
- 2 tablespoons fresh lime juice
- season to taste with salt
directions
- Pour dressing over slaw mix.
- Stir until combined.

WOW this was alot of prep work! I worked on this for 1 hour!!!! The outcome was wonderful and worth the work though. I made a TON of this stuff for a family reunion and the bowl was licked clean- everyone was asking.."who made this!?!?" "What all is in this?" "Wow - this has so much flavor!" I was proud to claim it! I used a whole head of cabbage, a hold jimaca and added 1 chopped red-bell pepper and 1 chopped jalapeno. I had to double to sauce recipe to get it all coated. thanks for sharing the recipe with us!
