Salsa Verde (Italian Green Sauce)

ingredients
- 1 cup fresh parsley, leaves only
- 1⁄4 cup pine nuts
- 2 tablespoons capers
- 1 garlic clove
- 3 anchovy fillets
- red wine vinegar, to taste
- 1⁄2 cup extra virgin olive oil
- salt & pepper
- 1 cup basil leaves (optional)
- 1⁄2 cup mint leaf (optional)
- 1 tablespoon Dijon mustard (optional)
- 1⁄2 cup parmesan cheese (optional)
directions
- Blend all the ingredients in a blender or with pestle and mortar.
- Leaving it to stand for a while allows the flavors to develop.
- Mix with pasta or place a dollop on meat or fish.
- Enjoy!
