ingredients

  • 1 (16 ounce) can red salmon (drained)
  • 1 beaten egg
  • 14 cup cracker meal

directions

  • Mix together.
  • Form into patties (about 6), Spray Foreman grill or skillet.
  • Takes about 6-7 minutes in Foreman Grill.
  • In skillet cook till brown on one side, turn and do same on other side.
  • Serve with baby potatoes, creamed peas and a salad.

  2. Yummy that was good. Added some chopped onions & celery. Also instead of cracker meal used italian bread crumbs. May add some salt & pepper next time.
     
  3. I got a kick out of seeing a recipe that I also grew up with and I still make them. Little MsMartha commented that they were a little dry. I usually add a couple tablespoons of milk to mine and most of the time I do not drain the juice (only pick out the bones). Try one or both of these to help with the dryness.
     
  4. I am not from NC but my mom was from the Missouri bootheel...she made ours the same...except no crackers...a little flour to hold them together...about the same taste. love this recipe and certainly part of down home cookin'. Joyce
     
  5. I can't believe so many people had these as kids! They're great and I make them at least once every couple of months for my kids. Your recipe is no different than mine, but I serve with Mac n' Cheese (home made, no boxes), green beans or spinach.
