Saigon Chicken Noodle Soup

ingredients
- 1 ounce rice noodles
- 4 cups water
- 1 chicken bouillon cube (more or less to taste)
- 2 slices fresh ginger
- 1 garlic clove
- 1⁄2 stalk lemongrass, thinly sliced
- 1⁄2 teaspoon fish sauce
- 1⁄2 cup cooked shredded chicken breast
- 2 tablespoons fresh cilantro
- 1 tablespoon basil
- 1⁄2 cup mung bean sprouts
- scallion, to garnish
- sriracha sauce (optional)
- white pepper (optional)
directions
- Boil garlic, ginger, lemongrass in broth for 20 minutes.
- Add fish sauce, cooked chicken, bean sprouts and cook for 5 minutes.
- Garnish with basil, cilantro to serve.
- Add sriracha sauce and white pepper to taste.
