ingredients
- 1 chicken, cut into pieces
- 3 tablespoons oil
- 1 onion, thinly sliced
- 3 large tomatoes, mashed
- 2 stalks celery, cut into thin rounds
- 1 teaspoon salt
- 1 hot chili pepper
directions
- Fry the chicken in hot oil until golden.
- Remove pieces and cook onions in the same pot. When they, too, are golden brown, return chicken pieces to the pot and add tomatoes, celery, salt and hot pepper.
- Reduce heat and simmer until chicken is tender.

Very tasty, very easy and very fast dinner with fresh flavors and a little zippy heat to the sauce. This would be great with a side of couscous or rice - I would have liked to use all of the sauce over some couscous. The recipe says it would feed 4-6. I used 2 large chicken breasts and served 3 adults comfortably. I would double the sauce ingredients to use it for any more than that. Delicious! Thanks Sara!
