Russian Meatballs

- 1 cup finely minced onion (or one small onion OR half of a large onion)
- 1 lb ground beef
- 1 egg (shell removed)
- 1⁄3 cup minced parsley
- 1⁄2 cup rice
- lotsa black pepper
- lotsa salt
- lotsa ketchup
- sour cream
directions
- Start boiling a largish amount of water. Less than you would use for pasta, but more than I am willing to estimate in this recipe.
- In the mean time, throw your finely minced onion, rice, ground beef, parsley (also minced) and de-shelled egg into a very large bowl and have a fun time with your hands. Season with salt and pepper!
- Once all the ingredients are nicely mashed together, form them into meatballs roughly the size of a toddler's fist. Place meatballs into boiling water and reduce to simmer, then cook for 20 minutes.
- After twenty minutes of simmering squirt in a whole lot of ketchup and continue simmering for another 15 minutes. Serve with sour cream and probably more salt and pepper.
