Rudy's at the Loop Texas Hot Sauce

"This is a copykat recipe I found on another internet site. I am not a hot dog fan but with Hoffman's German Franks and this hot sauce, I actually like them. I had tried making a copy of Rudy's sauce on my own, but this recipe tastes exactly the same as the one found at Rudy's on the shore of Lake Ontario just off the Oswego college campus."

  • Simmer onion and meat in a sauce pan until meat is in fine pieces.
  • Drain, transfer mixture to a food processor and pulse until finely ground.
  • Return meat mixture to pan, add remaining ingredients and simmer an additional 2 hours.
  • I always make a double batch and freeze some. This always goes in the camper with us.

  1. I grew up in Wellsville NY and my parents owned a bakery down the street for 10 years. I delivered the rolls to The Hot when I was young. My good childhood friend is a Rigas so I am pretty attached to the restaurant. One thing I have to say is that at Texas Hot they ask you if you want the hot dog with or without onions. The onions do not go in the sauce. They are chopped up very small, heated then added last to the hot dog before it is served. Other than that, definately not the exact recipe but what can you expect It's a secret, trust me.

  2. As a PA native I too was amused when I lived in Texas that they had never heard of this. It's is great sauce, very similar to the one passed down to me by my mother. At the top, she had written, "The Greeks Original Secret Recipe". PA and NY have lots of "Texas" Hot Dog places and they all serve some variation of this sauce. Very good.

  3. How funny!! I posted an identical recipe #220901 back in 2007. I guess I didn't see yours first. I grew up about 10 minutes from Rudy's right near SUNY Oswego and ate a lot of this! My mom got this recipe sometime back in the 60's when we lived there. And yes, supposedly it is from Rudy's on the Loop. I'll have to ask her who gave it to her!! Excellent recipe, BTW. Thank goodness I have a source for Hofmann's here in Houston!!

  4. I don't know , seems to be too much thyme or all spice or something. i have ate at rudy's for 30 some years, seems like something is wrong, good but not the same

  5. I grew up near Wlsv. Ny and the Texas Hot is a favorite place to go and the greek immigrant who developed the sauce is a beloved old man in this area. This sauce is close to the real thing. The recipe I have that is supposed to be "the real thing" too...(but I am sure there is something left out because it IS a secret recipe )tells you to bring all of the ingredients to a boil... raw hamburger and all. Then it calls for up to a cup of plain bread crumbs to thicken the sauce after simmering it. the texture is exactly the same with these two changes. I still can't figure out wha tis missing!

My husband and I live in the snow belt off the east end of Lake Ontario and we both love to cook. We have 4 dogs with a litter of Border Collies on the way. I train dogs and compete in agility and am really addicted to that besides cooking. I'm a computer geek for a living. We enjoy camping and boating and I love to read and paint and do lots of other crafty-type things.
