Ruby Red Grapefruit Jelly
- Ready In:
- 3 cups grapefruit juice
- 1 (1 3/4 ounce) envelope dry pectin
- 4 1⁄2 cups sugar
- In a medium saucepan, whisk pectin into juice. Bring to a full boil over high heat.
- Add sugar and return to a rolling boil. Boil hard one minute.
- Remove from heat, and pour into hot jars leaving 1/4 inch headspace. Adjust caps, and process in boiling water bath 5 minutes.

This is awesome!! It set up perfectly and is just the right amount of tart! I got 2 pints plus a little extra that I stuck in the fridge and have been enjoying all week on oat bread! I tried two different grapefruit jelly recipes in my last canning session and this was by far my favorite one - thanks for sharing!!
