  • Heat the oil in a skillet over medium heat.
  • Mix together the potatoes, onion, garlic, and rosemary.
  • Check seasonings (salt and pepper to taste.).
  • Add the mixture to the pan and press down with a spatula.
  • Cover and cook for 15 minutes.
  • Remove the lid and flip the mixture to brown the other side (uncovered) for an additional 15 minutes.

    Other than adjusting the recipe to make 2 servings instead of 4 I made this recipe as written. Being there was less food in the pan to be cooked I also adjusted the time accordingly. The recipe was easy to put together. The results were delicious. Thanks for sharing..

    husband said it was a hit. I actually used 1/2 bag frozen hash browns. cooked it a little longer. Thanks for the idea
