Rolo Cookies
"I got this recipe from my neighbour Bonnie who brought them to a cookie exchange. Needless to say they were a big hit with the kids (big and small). Having the Rolo in the center gives it a wonderful surprise when biting into it. Keep the Rolo's in the freezer until ready to use as it improves the texture of the cookie. One of the few cookies my DS likes. Prep time includes the 1 hour to chill dough."

40 cookies
ingredients
- 1 cup butter or 1 cup margarine
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 1⁄4 cups all-purpose flour
- 3⁄4 cup cocoa
- 1 teaspoon baking soda
- granulated sugar, for rolling cookies
- 40 Rolo chocolates
directions
- In bowl, beat butter or margarine, 1 cup granulated sugar and brown sugar until light Beat in eggs and vanilla until batter is smooth.
- In another bowl, combine flour, coca and baking soda.
- Stir into sugar-egg mixture to form soft dough.
- Chill dough in fridge at least 1 hour Place 1 tbsp of dough in palm of hand and press.
- Put 1 Rolo candy into centre.
- Bring up sides of dough to cover it completely.
- Roll between palms to make a smooth ball.
- Place remaining sugar on a plate and roll each ball in sugar.
- Place on greased baking sheet and bake cookies in preheated 350° over for 10 minutes or until tops are cracked and firm.
- Cool on rack about 10 minutes.

These are wonderful cookies! Delicious and easy to make. Made them for a family reunion tomorrow. As another reviewer mentioned, I didn't find the large Rolo's, so I used the mini ones and they were still great. Can't wait to hear what my family thinks. I sent a whole batch to my husband in Afghanistan and he was so happy! I think they'd be good as a peanut butter cookie, but they were still pretty good! -

These were best right out of the oven. The next day they didn't have a ton of flavor, but still good. Rolos are my favorite candy, so I just had to try these. -
these are very tastey. i got 50 some cookies and they will be a great addition to my holiday trays. I like them best fresh out of the oven because the caramel kinda gets too hard for me to chew once they cool but everyone else could still eat them fine. I missed the note about freezing the rolos, but i think they turned out just fine

I live in Ontario and work full time as a consultant in IT for a communication company in another province. I create test cases and scripts and initiate the testing for the software changes that the programmers make to the company’s various programs. I have the pleasure of working from my home and dialling into their network. I also sell Avon for fun.
I met my husband (Paul) on a blind date. We dated 3 years and have been married for 25 years. We have two children a son(age 20) and a DD(age 17). We have been blessed with the best two kids anyone could ask for.
DH is a commerical airline pilot and currently is a "Check Pilot" on the A320. He is away quite a bit, so when he comes home I try to make sure he has a decent meal. He eats out when on the road so he really enjoys a good home cooked meal when he arrives home, while the rest of us want to go and eat out.
I love to spend time in my garden, travel and try new recipes. DH and I love to travel or just spend time at a cottage in the summer. I have not been on a cruise but hope to within the next 2 years (maybe for our 25th wedding anniversary.)
We pretty much eat anything. DH especially loves seafood (more than I do.) while I prefer to eat chicken. We are so predicable when ordering our meal at a restaurant. Next, I think it would have to be Italian and then something spicy like Thai or Indian. My family loves Indian food but I have never had the courage to make it. Maybe I will someday.
I like to read true stories and criminal books. David Baldacci is one of my favourite authors.
My favorite restaurant is "Bin 23", "Einsteins Cafe," "Abberfolye Mill"
My brother sent me the link to Recipezaar and now I am hooked trying new recipes every day. I don't think I will buy another cook book.
