Rocio Salad (Beets, Avocado and Feta)

ingredients
- 2 heads romaine lettuce, cut into small pieces
- 1 avocado, seeded and cubed
- 1 cooked beet, cubed
- 1⁄2 cup crumbled feta cheese
- 1⁄2 cup Italian dressing (we like to use Good Seasonings Italian dressing made with red wine vinegar)
- 1 tablespoon honey
directions
- Mix your Italian dressing with the honey.
- Toss the lettuce with the dressing.
- Top with beets, then avocado, then feta.
- Garnish with freshly ground black pepper if you wish.

Delicious! I knew I would love this, just because I love avocado, beets and feta anyway. I used golden beets that I roasted myself -- I don't buy red beets very often because they stain everything. My poor avocado was a bit past it's prime, so I'd really like to try this again with a firmer avocado (if it tasted that good with an old avocado, I can only imagine how good it would be with a better one). I only had one head of romaine, but that still made quite a bit of salad. I was eating this for dinner, so I topped it with some grilled chicken strips after I snapped my photo, too (although my poor anemic avocado looks like chicken in the photo anyhow, lol). This was a good salad. I've been on such a beet kick lately, just love beets in salad! I also love feta and avocado so this sounded like the perfect salad for me. Only change I made was to use spinach instead of romaine because it's what I had on hand... and I definitely didn't use full amount of salad that was called for. Today for my lunch I made it again with a balsamic fig dressing and added walnut pieces and green onion. It was great! Made for ZWT7.

Very good and different salad which we enjoyed even with my minor variations. I only used 1 head of lettuce (which was more than enough I think), skipped the avocado and used low fat feta and I also skipped the honey. Delicious salad which we enjoyed with fish. Made for Veg n' swap January 2010. Thanks for sharing this keeper which we will have again soon!
