- 2 bartlett pears, cored and cut into wedges
- 2 small red onions, cut into wedges
- 2 sweet potatoes, peeled and cut into 1/2-inch half moons
- 6 sprigs thyme, plus more
- 3 tablespoons olive oil
- kosher salt
- pepper
directions
- Heat oven to 425°F. On large rimmed baking sheet, toss pears, onions, sweet potatoes, and thyme with olive oil and 1 teaspoon each salt and pepper. Roast until golden brown and tender, 35 to 45 minutes.
- Sprinkle with additional thyme if desired.

It has been my inspiration for most of our family's special occasions and holiday meals and it was through exploring this book that cooking and entertaining became such a pleasurable hobby for me.
