- 3⁄4 cup garbanzo beans
- 6 cups water
- 1 teaspoon coconut oil
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon cumin
- 1⁄4 teaspoon chili powder
- 1⁄4 teaspoon kosher salt
- 3⁄4 cup dried craisin
- 1⁄2 cup wide shaved coconut flakes
directions
- Bring water to a boil in large kettle, add garbanzo bean and reduce heat to keep a slow gentle boil for one hour.
- Rinse garbanzo beans in a colander under cold tap water until cool.
- Spread garbanzo beans out on a sheet pan and remove skins.
- Put garbanzo beans in a bowl and add coconut oil, cinnamon, cumin, chili powder, kosher salt. Gently stir to coat.
- Spread garbanzo beans out on the sheet pan again and bake at 375° for 10 minutes.
- Stir beans and bake for another 10 minutes.
- Stir beans again and bake another 10 minutes until they are slightly brown.
- Cool, transfer to a bowl or storage container, add dried cranberries, coconut flakes and gently stir. Your roasted garbanzo beans snack is ready to enjoy!
