I made this sandwich for my mom, brother and myself the other night and it was a hit! I used white sharp cheddar instead of sharp cheddar, dried cilantro instead of fresh (only because I just had to throw some away), and diced green chiles instead of whole. Also I realized I didn't have dijon mustard - it was honey mustard - so I did half honey mustard and half regular yellow mustard mixed with a tiny drop of white vinegar (per google search for dijon mustard substitute). Everything else followed the recipe. I can't imagine this sandwich on any other bread besides sourdough. I ended up with extras of all the ingredients since there were only 3 of us so that means lunch for me the next few days. :)Reply
