  • 1 (455 g) can black beans (or kidney beans or white beans)
  • 1 (455 g) can rotel, mexican flavoured tomatoes (or plain tinned tomatoes with some mexican seasoning sprinkled in)
  • To serve

  • cornbread or steamed vegetables

  1. Excellent beans. I used Spicy Red Pepper Tomatoes since I've never seen Rotel tomatoes here and served them over rice. They'd be a lovely addition to a Mexican themed meal or, as a previous reviewer suggested, with chips. I love quick and easy dishes. Thanks for posting.
     
  2. It's true, these really are ridiculously easy: my kind of recipe. I served these as a side to tacos but next time would serve them over rice for a meatless main dish. I would also try adding corn to the mixture which would still keep the recipe in the ridiculously easy range.
     
  3. Tastes great cold, with chips! It would be good with anything added to it.
