DIRECTIONS

  • wash rice and leave in water.
  • heat oil, add onions and mix until slightly browned.
  • add carrots, tomatoes and peppers and let them simmer
  • add 4 cups water and let it boil.
  • strain rice and add it to the pot, add the salt.
  • cover and reduce heat to medium low, cook for 20 minutes.
  • remove from heat and fluff with a fork.
