ingredients
- 4 cups brown rice flour
- 2 2⁄3 cups potato starch
- 2 2⁄3 cups tapioca flour
- 2 cups sugar
- 4 tablespoons baking powder
- 4 teaspoons xanthan gum
- 4 teaspoons unflavored gelatin
- 3 1⁄2 teaspoons salt
directions
- Mix all ingredients and store in an air tight container.

*Reviewed for Pick-A-Chef Fall 07* Very quick to put together and so handy to have in the pantry. Really makes a muffin in a hurry- used in "recipe#242621" with "recipe#242623". So much cheaper than pre-packaged gluten-free muffin mixes. I would leave out the gelatin next time though, as I dont feel it was a necessary addition with the xanthan gum. Thanks for sahring a great recipe and one that I will use again.Photo also being posted

I live with my husband in Joliet, IL. I'm a network administrator and also teach step aerobics. My hobby during warmer weather is my vegetable garden. I love to cook and make up interesting recipes. I've recently been put on a restricted diet. No dairy, gluten, wheat, oats, sugar. So, I'm looking for ways to spice up my meals. I cook non-restricted meals often as my husband can eat whatever he wants and I love to cook for him. But, once a week, I make him something "interesting" and healthy and he has to at least try it. So far, it's been a big hit.
