Rustic Rhubarb Crisp

"Okay, there are other rhubarb crisp recipes out there, but none exactly the same as this one. (It's my mom's, so I am partial to it!) There is less sugar, more oatmeal and rhubarb, and it is super easy! And for more crispy goodness, the topping can easily be doubled. I hope that you like it as much as I do!"

This was a really tasty rhubarb crisp recipe! The only problem we had was that it produced so little crumb topping that there was no way it could cover a 9x13 pan. We mixed an additional 2 cups or so of oatmeal into the topping mix to cover the entire pan, and even then it was fairly thin.

<p>My name is Karen and I live West of Chicago (on the edge of no where!) with my DH, our two German Shepherds, and our two daughters. I love to golf, garden (except for the weeding!), am addicted to romance novels (and good science fiction), and I love to bake--usually cakes from scratch when I have the time! Since getting married, I have been cooking a lot more and am having a lot of fun trying new recipes!
