I made these and took to work. I work with 25 guys in a factory. They are my taste testers for new recipes. It was a HIT. I read the previous two comments and instead of adding additional sugar, I added a large box of strawberry Jell-O. They were a tad bit on the sweet side. I did everything else according to the recipe. I will definitely make these again. Next time I will probably use a small box of Jell-O or add maybe a 1/2 more rhubarb.

Made this to take to husbands family reunion, as Boomette advised added more sugar 1 1/2 cups total to cream cheese mixture. Excellent recipe something different to do with rhubarb other than just pie.

These bars are not too sweet. Someone who really like it sweet, I recommend adding a little bit sugar. After 40 minutes, it was done. Thanks Charlotte. Made for the Babes of ZWT4
