Refreshing Cucumber and Tomatoe Salad

  • Put the cucumber slices in a strainer and sprinkle with the 3/4 tsp salt, coat well.
  • Place the strainer over an empty bowl.
  • Put in refrigerator in order to allow the cucumbers to drain their liquid for about 40-45 minutes.
  • After draining time, remove any excess moisture from the cucumbers in the strainer.
  • Place the cucumbers in a large bowl.
  • Add the tomatoes and onions.
  • In a small bowl, whisk together lemon juice, cider vinegar, olive oil, Dijon mustard, splenda, dill weed, pepper and cayenne pepper.
  • Pour over the salad mixture and toss.
  • Sprinkle with the crumbled feta cheese.

  1. I remember having a tomato salad about 4 years ago for the first time and just recently remembered again how great it was and wanted to try and make it myself, This is not the excact recipe I remember but is still so yummy and have already made it twice this week!
