Red Velvet Cupcakes With Cream Cheese Frosting

ingredients
- 2 1⁄2 cups flour
- 1 1⁄2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1⁄2 cups vegetable oil
- 1 cup buttermilk, room temp
- 2 eggs, room temp
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla

Frosting
- 16 ounces cream cheese, softened
- 1 cup butter, softened
- 1 teaspoon vanilla
- 4 cups powdered sugar, sifted
directions
- Preheat oven to 350 degrees.
- Sift the first five ingredients together. In another bowl, slowly mix together the rest of the ingredients for the cupcakes. Add the dry ingredients to the wet and mix until well combined.
- Fill paper lined muffin tins about 2/3 full. Bake for 20-22 minutes, turning the pans once at the halfway mark. Stick a toothpick in the middle of one to see if it comes out clean for doneness. Cool before frosting.

- Mix cream cheese, butter, and vanilla until smooth. Add the sugar slowly. Mix on high until it's fluffy.

Good flavor, but I think it could be improved by doubling the cocoa. Most cake recipes I've tried call for at least 2 Tbls. for similar amounts of flour, sugar and fat. The only thing I did differently was I used cake flour. Even though it seems like a lot of icing, you'll need it if you are going to pipe the icing on as I did. If you are just going to spread it on, you could probably half the icing recipe. A nice little treat for my Valentines. Thanks for posting.4Reply
