Red-Hot Cajun Blue Cheese Wings

- 40 chicken wings
- vegetable oil, for frying
- 1 cup butter
- 2 cups Frank's red hot sauce
- 1 tablespoon cayenne pepper
- 1⁄2 cup flour
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon cumin
- 2 tablespoons cajun seasoning
- 1 1⁄2 cups marie's chunky blue cheese dressing
directions
- Combine flour, cajun seasoning, cayenne pepper, onion powder, garlic powder, and cumin in a bowl and mix well.
- Roll each chicken wing in the flour mixture until well coated.
- Fry the wings in the oil (about 10-12 at a time) for about 13 minutes, or until crispy on the outside and juicy on the inside.
- Melt the butter in microwave or on stove top.
- In a large bowl or foil pan combine the hot sauce and melted butter and mix well. Then add in the blue cheese and combine until the mixture is an even color and is like a creamy orange color.
- When all wings are done, toss in the sauce.
- Serve hot with blue cheese and celery for garnish.

This is a great wing recipe. I made as written with a couple of tweaks, I added 1 tablespoon whole wheat flour to the four mixture and combined all in a plastic bag and let sit in the refrigerator for about an hour. The whole wheat flour and refrigeration adds a little extra texture to the finished wings. The sauce is fabulous with the mix of the blue cheese dressing. I used Texas Pete hot sauce.
