Raspberry Mint Cooler

- 3 cups water
- 1 - 1 1⁄2 cup chopped of fresh mint
- 3⁄4 cup sugar
- 3 (10 ounce) packages frozen sweetened raspberries, thawed
- 2 1⁄4 cups lemonade concentrate
- 6 cups cold water
- crushed ice
directions
- In a large saucepan, bring water, mint and sugar to a boil.
- Stir until sugar is dissolved.
- Remove from the heat; let stand for 5 minutes.
- Add the raspberries and the lemonade concentrate; gently mash raspberries.
- Line a strainer with four layers of cheesecloth; place over a 1-gal. container.
- Slowly pour raspberry mixture into strainer' and discard pulp and mint.
- Add cold water to the raspberry juice; stir well.
- Serve over ice.

Wow, was this homemade lemonade ever wonderful. It was sweet, tart and tangy. Loved the rich raspberry flavor. It was perfection and very refreshing. Quick and easy to make with ingredients always found in my pantry. Made for Pac Spring Safari 2013. Forgot to say that the mint ratio was perfect in this drink. I would highly recommend it.

I live in Illinois with my husband and we both love to try new things. He's definitely a better cook than I am, but I try to keep up. We have three dogs but no kids as of yet. Maybe in the next year or two we will start thinking about children but for now we are enjoying our time together. I love making up drinks and desserts and i'm not too bad at baking.
