DIRECTIONS

  • Preheat oven to 425.
  • Combine olive oil, ginger, garlic and saute until translucent.
  • Add maple syrup, jam, lemon juice and soy sauce and continue simmering for 15 minutes.
  • Chop macadamia nuts finely.
  • Cook bacon until cooked through, then chop finely. Mix chopped bacon with the macadamia nuts.
  • Coat salmon with sauce and then put face down into the macadamia bacon mix until coated.
  • Place salmon on lightly greased baking sheet.
  • Cook salmon approx 15 minutes until done (based on size of fillet).
  • Drizzle with extra sauce.
